    A Happy New Year to All from Oaxaca. In this issue, we take a trip to the Yucatan (our first) and then back to sweet-home Oaxaca to talk about the unique Night of the Radishes and our own Mole (after enjoying, we must admit, that great Yucatecan cuisine) with a side trip to Hierve El Agua.

Night of the Radishes
  On December 23rd, you'll find religious tableaux, village scenes, historical events, mythical tales --- subjects of art you might find around the world. But these themes are expressed in carved radishes! For the annual Night of the Radishes, the humble plants are transformed into saints and conquistadors, the infant Jesus and Virgin Mary. There are animals, dancers, even the revolutionary hero Emiliano Zapata. Once these master radish-artists have finished with their carving, any thoughts of supper have vanished.

Oaxaca's Mysterious Marvelous Misunderstood Mole

Oaxacan cuisine 
 
The French boast of their bearnaise. Indians are known for tantalizing curry, and Italians for rich, thick marinara. In Mexico, the undisputed national sauce is mole, an intoxicating blend of chocolate, chiles, garlic, onions, nuts and so much more. The misinformed refer to mole (pronounced MOH-lay) as "that Mexican chocolate sauce." Although chocolate is indeed an ingredient - if cooked properly, only a mysterious hint remains when the sauce is served over turkey, chicken, seafood, pork or roasted vegetables such as potatoes.

Hierve el Agua

 
In fact, the boiling water (Hierve el Agua) of this small town outside Oaxaca is a bit of a misnomer. The bubbles are formed by escaping air rather than heat (Hierve el Agua is actually a warm spring rather than a hot spring), but that doesn’t make this idyllic setting any less worth a visit.

   Oaxacans visit their neighbors and find that a fitting way to approach the Yucatan is just to savor its attractive, gentle, people. You will be of interest to them and, they assume, they will be of interest you. They are quick to make it clear that the encounter is a mutual pleasure. And it is.
